Creamy Broccoli Omelette

A quick, cheesy delicious breakfast or lunch.


  • 1/4 Cup Cream Cheese Spread
  • 3 Teaspoons Milk
  • 4 Eggs
  • 2 Tablespoons Water
  • Salt and Pepper
  • Butter
  • Cooked Broccoli
  • Grated Cheese
Takes , serves 2.


  1. For the sauce, melt the cream cheese spread and the milk together in a saucepan over a very low heat.
  2. To make the omelette, combine the eggs and water. Season and heat until fluffy. Fry the omelette in a little butter until the base is golden.
  3. Arrange the cooked broccoli along half of the omelette. Fold over and cook until it's heated through.

    Serve with the melted cheese sauce and a little grated cheese. Enjoy!

    nb: Microwave: To make the cheese sauce, place the cream cheese spread and milk in a small dish. Microwave on Medium for approx 30 to 50 seconds, depending on the wattage of microwave so don't burn it.
