Baked Avocado with Salmon

A quick delicious breakfast or lunch featuring Baked Avocado and Salmon.


  • 2 Avocados
  • 2 Tablespoons Lemon Juice
  • Salt and Pepper
  • 1/2 Cup of Sour Cream
  • 2 Shallots (Spring Onions) Chopped
  • 220g (7.8 oz) Red Salmon, Fresh or Canned
  • 1/4 Cup Grated Cheese
Takes , serves 4.
Baked Avocado with Salmon


  1. Cut Avocados in half, remove seeds.
  2. Sprinkle with 1 Tablespoon of Lemon Juice also the Salt and Pepper.
  3. Combine the Sour Cream, remaining Tablespoon of Lemon Juice, Shallots and Red Salmon.
  4. Sprinkle with grated Cheese. Bake at 190° (375°F) for 15 to 20 minutes or until avocado is tender.
  5. Serve with a salad of your choice.
